Grapes, because of the natural chemicals can ferment without adding sugar, enzymes or additives. The yeast in or added to grapes causes the sugar to convert to alcohol. The type of grape used will determine the type of wine that is produced.
Most wines are made from a European variety of grapes such as Merlot, Chardonnay, Pinot Noir, and Cabernet Sauvignon. A wine designated by one of these names usually has to by law contain at least 75% to 85% of that grape. However, some of your more desired wines may be blended wines, made from blending a variety of different grapes.
